Quick Answer: It Revives Minions, Not Energy Shield
In the current client Grim Feast does NOT restore Energy Shield. It is a Spirit gem that converts fallen minions into Grim Remnants and can bring minions back through Grim Resurrection.
Every old 'ES overflow' build guide is obsolete. If you are following a pre-0.3 guide for Grim Feast, discard it and use the minion-revival version.
Old Version vs Current Version
Before the rework, Grim Feast produced Energy Shield remnants / overflow and was a defensive tool. That design is gone.
From 0.3 onward Grim Feast is a minion tool: dead minions leave Grim Remnants that store Life, and Grim Resurrection spends them to revive minions. The 0.5 patch added a resurrection cooldown and bug fixes that change how aggressively you can revive.

Requirements and Setup
Grim Feast needs Reviving Minions — minions that, on death, leave a Grim Remnant the skill can later spend. Minions that simply dissolve on death without a remnant do not feed the revival loop.
It is a Spirit gem, so it competes with other persistent buffs for your 30 Spirit reservation. You enable it once and it runs in the background.

Persistent Buff and Spirit
Grim Feast is a persistent buff: once enabled it stays active and reserves 30 Spirit for the whole map. You do not recast it; you manage it through Spirit budget and revival timing.
Because it is always on, the value is in what it does passively — collecting remnants and enabling Grim Resurrection — not in active casting.

Remnants and Grim Resurrection
When a Reviving Minion dies it drops a Grim Remnant storing a portion of its Life. Grim Resurrection consumes remnants to bring minions back, but it does not revive every minion at once — it revives a subset, and the order is determined by the remnant queue, not by which minion you 'want' back.
If many minions die together (common in boss fights), the revival only covers what the stored Life can pay for, so some minions stay dead until more remnants accumulate. The 0.5 patch added a resurrection cooldown, so you cannot spam revival every frame.

Spirit Budget Trade-offs
Grim Feast costs 30 Spirit, the same pool used by Herald buffs, auras and other persistent minion supports. On a minion build you must decide whether the revival safety net is worth more than an extra aura or damage buff.
Most minion builds that already run Reviving Minions keep Grim Feast, but tight-Spirit builds may drop it for more damage.

Quality
Quality on Grim Feast increases the portion of minion Life stored per remnant, so higher quality means each remnant revives more or revives minions more reliably.
Verify the exact quality roll on the current client; it scales the stored-Life ratio, not the revival count directly.

Persistent supports that boost minion survival or additive minion damage pair well, since Grim Feast is itself a persistent minion buff. Clarity and other Spirit-affecting supports indirectly help by easing the reservation pressure.
Avoid supports that assume you actively cast the gem — Grim Feast is enabled, not spammed.

Lich and Infernalist minion builds use Grim Feast as a revival safety net so their army stays alive through map and boss attrition. Gemling Legionnaire variants use it when they already run Reviving Minions and can spare the 30 Spirit.
In every case the build values the passive revival more than the lost damage aura.
